I’ve been a fan of Garfield most of my life, and have all the books. The original dailies were not in colour. Remember, these were newspaper comics, and newspapers did not use a lot of colour 38 years ago, certainly not on the comics page. The Sunday strips were in colour, but printed in B&W in the collections. Newer releases of the collections are being colourized as they are re-released, at least in the Fat Cat 3-pack volumes.
